Just had a potato, sweet potato and caramalised pizza with lots of garlic. Can't lay claim to it's success but the deli down the road from where I live can. Yum. Shall be attempting replication next week as my (generally disapproving of pizza) husband approved greatly.
Tonight..
Portugese Roasted Chicken.
1.6kg chicken
1 red thai chilli
1 tablespoon sweet paprika
3 cloves crushed garlic
2 tsp salt
1/2 cup lemon juice
2 tablespoons olive oil
1 tbsp fresh oregano...
Cut backbone out of chicken and squash it flat..blend all ingredients together and pour over chicken.slow roast at 150 degrees for 1.5-2 hours...(i keep basting with sauce whilst cooking it)..it is very, very yummy and so easy...

It sounds so easy but I'm scared of cutting bones out of things - is it hard? De-boning sounds like a major operation.

PS Old fashioned cakes aren't as rich as the new fangled variety. I would can, have and will again eaten a whole cake in one sitting.
It isn't as hard as it sounds. You just cut alongside both sides of the bone...but, what I do??? Cheat and use pieces...marylands, or thigh cutlets on the bone and some drumsticks. Works just as well and is easy peasy.
I agree with you on the old fashioned types of cake..much lighter. Argghhh I wish I could bake successfully!

This is a good easy cake that anyone can make - even me, and I cannot bake - it's about 200g of almond meal by the way. I made it today with blood orange, and my plan one day is to make it with ruby grapefruit, but it's delicious with mandarins. SO much good citrus fruit around at the moment.
Your chicken sounds YUM. I am also scared of cutting out bones. I also have never had a rapport with my butcher and I never feel comfortable asking them to do such things for me.
Oh that sounds delicious. (copying that one for futire reference)
